Easy quinoa peppermint dessert balls

This is one of our family's favorite recipes. Quinoa plus dessert. How can it get any better!

Our kids had fun making this with their momma. And they were asking for second and third and fourth helpings...

The best part? They're easy. Don't believe us? Try it yourself...

Peppermint balls: Ingedients

  1. 1/4 Cup coconut butter, melted (or coconut oil)
  2. 1/4 tsp peppermint oil, alcohol free (Frontier brand has a good one)
  3. 1 scoop stevia (Try to buy the kind without fillers -- just stevia)
  4. 1/2 Cup plus 2 Tbs quinoa, cooked and cooled (It's very important that this is cooled.)
  5. Carob powder


Peppermint dessert balls: Instructions

  1. Measure the dry coconut butter packed together.
  2. Put in a glass bowl and set in a pot of water.
  3. Melt over low to medium heat.
  4. Stir.
  5. Add peppermint oil and stevia.
  6. Stir.
  7. Add quinoa and stir.
  8. Let cool for about 3 minutes. (If it's not cooled enough, it will be difficult to form into balls.)
  9. Form into balls about 1 inch in diameter--about 1/2 to 1 teaspoon in amount.
  10. Set on plate and sprinkle with carob powder. Rolling the balls in the powder also works.
  11. Refrigerate for an hour -- If you can hold out that long!

Peppermint dessert balls: Final analysis

This recipe makes approximately 18 balls.

I know there are a lot of steps involved with this recipe. But I think in the end it's fairly simple. You'll get the hang of it!

Easy quinoa salad

We already posted this on to our quinoa salad recipes page. But it bears repeating here.

We developed an easy quinoa salad recipe that we think you'll enjoy.

The ingredients are basic -- quinoa, tomatoes, pepper, onion, spinach, oil, salt, and herbs. The instructions are even more simple -- just add them all together on a plate and mix them together.

Another easy recipe!

Again, the ingredients are basic -- quinoa, tomato juice, salt, herbs and spices, onion, and tomatoes.

And the instructions are simple. Boil the quinoa, put the spices in, stir in other ingredients. And that's it!

Easy quinoa biscuits

Since these biscuits are made with quinoa flakes, they've made their official home on our quinoa flakes recipes page.

This recipe calls for quinoa flour, chia seeds, quinoa, quinoa flakes, baking powder, salt, oil, and coconut milk.

Then all you need to do is mix the dry ingredients, add oil, stir in the coconut milk, drop onto a greased cookie sheet, and then bake for 15 minutes.

Did someone say "easy, simple, and basic!" Oh, that was me...
